Spanish Pie – Delicious Savory Vegetable Pie from Galicia – Easy Recipe

Spanish pie is one of the tastiest vegetable-based savory pies, rich in nutrients and full of flavor. It’s also simple to prepare, making it a popular choice for home cooks to make again and again. This hearty dish originates from Galicia, Spain, and is traditionally made with mushrooms—though you can add other vegetables based on your preference.

For the Filling:

  • 3 cups of sliced mushrooms

  • 2 tablespoons of butter

  • 1 fresh egg

  • 7 stalks of sliced leeks (or similar greens)

  • 2 teaspoons of vinegar

  • 1 cup of shredded cheese

  • 1 grated carrot

  • ¼ cup of raisins

For the Dough:

  • 1¼ cups of all-purpose flour

  • ½ teaspoon of salt

  • 5 tablespoons of ice-cold water

  • 110 grams (about 4 oz) of butter, cut into small cubes


How to Prepare Spanish Pie:

Step 1: Prepare the Dough

  1. Sift the flour and salt into a mixing bowl.

  2. Rub the butter cubes into the flour mixture using your hands or a pastry blender (or stand mixer) until it resembles coarse crumbs.

  3. Gradually add the ice-cold water and mix just until a dough forms.

  4. Cover the dough and refrigerate for at least 1 hour.

Step 2: Make the Filling

  1. In a pan over medium heat, melt the butter and sauté the mushrooms and leeks for about 15 minutes until tender.

  2. Add the grated carrot, raisins, and vinegar. Stir well and cook for another 3 minutes.

  3. Turn off the heat and let the mixture cool completely.

Step 3: Assemble the Pies

  1. Separate the egg yolk from the white. Place each in separate small bowls.

  2. Lightly flour a clean surface and roll out the chilled dough.

  3. Using a round cutter or glass, cut the dough into evenly sized circles.

  4. Place a spoonful of the cooled filling in the center of each dough circle. Sprinkle with a bit of shredded cheese.

  5. Brush the edges of the dough with egg white to help seal the pies. Fold over and press the edges firmly to close.

  6. Arrange the pies on a baking tray lined with parchment paper. Brush the tops with egg yolk for a golden finish.

Step 4: Bake

  1. Preheat the oven to 200°C (390°F).

  2. Bake the pies for around 30 minutes, or until they are golden brown and fully cooked.
