Ush al-Bulbul (Bird’s Nest Pastry) – A Syrian Dessert Favorite
Ush al-Bulbul, or "Bird’s Nest", is one of the signature sweets of the Syrian kitchen. It’s known for its delightful texture, rich flavor, and elegant presentation. This dessert is simple to prepare and perfect for special occasions or as a treat to share with loved ones.
Ingredients:
For the Pastry:

1 package of kataifi dough (shredded phyllo dough)

Clarified butter or ghee (as needed)

2 cups of pistachios (raw or lightly toasted)

2 cups of sugar syrup (see below)
For the Sugar Syrup (Ater):

4 cups of sugar

2 cups of water

1 tablespoon of orange blossom water

3 drops of lemon juice
Preparing the Sugar Syrup:

In a saucepan, combine sugar and water, stir, and bring to a gentle boil over low heat.

Once the syrup begins boiling, add orange blossom water and lemon juice.

Allow it to simmer for a few more minutes until slightly thickened.

Remove from heat and let it cool completely. (This syrup will be poured over the hot pastries later.)
Preparing the Pistachio Filling:

In a bowl, soak the pistachios in a portion of the cooled sugar syrup.

Stir well, and let them sit for about 15 minutes to absorb the sweetness.

Option 1 – Oven Toasting:
Spread the sweetened pistachios in a buttered baking tray and toast in a moderate oven until golden.Option 2 – Stovetop Toasting:
Place the mixture in a nonstick pan over low heat and stir frequently until the pistachios are toasted. -
Once toasted, let the filling cool completely.
Assembling the Bird’s Nest Pastry:

Lightly grease a baking tray with clarified butter.

Take a small amount of kataifi dough, brush it with butter, and wrap it loosely around two fingers to form a ring or nest shape.

Place the formed nests into the baking tray, repeating the process until all dough is used.

Fill the center of each nest with the sweet pistachio mixture.

Drizzle about ½ cup of melted butter over all the pastries in the tray.

Bake in a preheated oven at low temperature (around 160°C / 320°F) for 20 to 30 minutes, or until the nests turn golden brown and crispy.
Finishing Touch:

Once out of the oven, immediately pour the cold syrup gently over the hot pastries. This contrast in temperature ensures the perfect texture.

Let the tray rest until the pastries have fully absorbed the syrup and cooled down.
Serving:
Arrange the nests neatly on a serving plate, and your Ush al-Bulbul is ready to enjoy! These delicate, golden bites make a stunning presentation and offer a perfect balance of crunch and sweetness.
