  • 250 grams chopped button mushrooms

  • 2 chicken bouillon cubes

  • 1/4 cup hot water

Preparation Method:

  1. Season and sear the beef:
    Rub the beef fillet with black pepper and oregano. Heat olive oil in a pan over medium heat and sear the fillet on all sides until partially cooked. Remove from the pan and set aside.

  2. Prepare the mushroom mixture:
    In the same pan, melt the butter, add the chopped onions, and sauté until soft. Stir in the garlic and mushrooms. Dissolve the bouillon cubes in the hot water, add it to the pan, and cook until the mixture is fully combined and the moisture is reduced.

  3. Blend the mixture:
    Let the mushroom-onion mixture cool, then transfer it to a blender or food processor and pulse until it becomes a cohesive, thick paste.

  4. Assemble the Wellington:
    Lightly flour a flat surface and roll out the puff pastry until it's large enough to wrap the beef. Spread Dijon mustard over the seared beef, then layer the mushroom paste on top.

  5. Place the beef in the center of the pastry. Wrap it tightly, making sure the seam is at the bottom. Place the wrapped beef on a greased baking sheet. Brush the top with beaten egg for a golden crust.

  6. Bake:
    Preheat your oven to 180°C (356°F) and bake for about 30 minutes, or until the pastry is golden and crisp.
