1 teaspoon ground nutmeg

350 g light cream
For garnish:

75 g fine sugar

200 g pickled ginger juice
Preparation Steps:
Start by chopping all vegetables—carrots, leek, potato, and celery—into small cubes.
In a large pot, melt the butter over medium heat. Add the vegetables, nutmeg, half the amount of pickled ginger juice, and half the sugar. Stir gently to combine all ingredients and let them cook for about 15 minutes.
Next, add the chicken stock cube and cream to the mixture. Stir well, and once it begins to boil, reduce the heat to low, cover the pot, and let it simmer for about 30 minutes.
Once the vegetables are fully cooked and tender, remove the pot from heat. Using a blender, puree the mixture until it reaches a smooth, velvety texture.
Return the soup to the pot, season with salt and black pepper, then add the remaining pickled ginger and sugar. Stir continuously until the sugar dissolves and the soup thickens slightly.
Let the soup cool down slightly, then garnish with a drizzle of pickled ginger juice before serving.
