Cheese Samosa – Recipe & How to Make Traditional Cheese-Filled Samosas

Ingredients for the Dough:

Cheese Samosa

 

  • 2½ cups of flour

  • 1 tablespoon of instant yeast

  • 4 tablespoons of vegetable oil

  • 1 teaspoon of salt

  • Warm water (as needed to form a soft dough)

  • 3 cups of vegetable oil (for frying)


Ingredients for the Cheese Filling:

  • 250 grams of feta cheese

  • 100 grams of Akkawi cheese (pre-soaked to remove excess salt)

  • 1 medium onion, finely chopped

  • 1 tablespoon of dried wild thyme (za’atar)


Preparation Method:

  1. In a large bowl, mix the flour, yeast, and salt. Add the vegetable oil and gradually pour in warm water while kneading, until a soft, smooth dough forms.

  2. Cover the dough and let it rise in a warm place until doubled in size.

  3. Meanwhile, prepare the filling by combining the feta, Akkawi cheese, chopped onion, and za’atar in a separate bowl. Mix well until the ingredients are fully incorporated.

  4. Once the dough has risen, lightly flour a clean surface and roll out the dough to a medium thickness.

  5. Using an empty cup or round cutter, cut the dough into small circles.

  6. Place about one tablespoon of the cheese filling onto one side of each circle. Fold the dough over and seal the edges tightly by pressing them together (you can use a fork to crimp the edges if desired).

  7. Heat the frying oil in a deep pan. Once hot, gently drop the samosas into the oil, one by one, and fry until golden brown and crispy.

  8. Remove the samosas from the oil and place them on paper towels to absorb any excess oil. Serve hot for the best taste experience.

If some filling ingredients are unavailable or if you simply prefer different flavors, feel free to adapt the recipe to your liking:

  • The chopped onion can be omitted entirely.

  • Za’atar can be replaced with fresh parsley or mint for a different aroma.

  • Feta and Akkawi cheese can be substituted with any other cheese you enjoy—mozzarella, kashkaval, or even cheddar.

  • For a lighter version, skip frying altogether and bake the samosas in a preheated oven until golden and cooked through.
