Chicken and Shrimp Jambalaya is a rich, flavorful dish enjoyed around the world, known for blending the savory flavors of land and sea. This classic recipe combines chicken, shrimp, smoked sausage, vegetables, and spices into one satisfying one-pot meal.

Chicken and Shrimp Jambalaya


 

  • 1 whole chicken (approximately 2 kg), cut into pieces

  • Paprika (to taste)

  • 3 tablespoons olive oil

  • 1 cup chopped onion

  • 1 cup chopped green bell pepper

  • 2 celery stalks, chopped

  • 1 garlic clove, minced

  • ½ pound (about 225 g) smoked sausage, sliced

  • 2 cans of stewed or cooked tomatoes

  • 2 cups chicken broth

  • 1 cup long-grain rice

  • 2 teaspoons dried thyme

  • 1½ teaspoons salt

  • ¼ teaspoon black pepper

  • ¼ teaspoon Tabasco or hot sauce

  • 200–250 grams of shrimp (peeled and deveined)


Preparation:

  1. Season the chicken:
    In a large bowl, sprinkle paprika over the chicken pieces and rub well to ensure even coating.

  2. Sear the chicken:
    In a large, deep skillet or pot, heat olive oil over medium heat. Add the chicken and cook until browned on all sides. Once seared, remove the chicken and set aside.

  3. Sauté the vegetables:
    In the same pot, add chopped onions, bell pepper, celery, and garlic. Sauté the mixture for about 10 minutes, or until the vegetables are softened and aromatic.

  4. Add the remaining ingredients:
    Stir in the sliced smoked sausage, cooked tomatoes, chicken broth, rice, thyme, salt, black pepper, and Tabasco sauce. Mix thoroughly.

  5. Simmer with the chicken:
    Return the chicken pieces to the pot and stir everything gently to combine. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 30 minutes, or until the chicken is cooked through and tender.

  6. Add the shrimp:
    Add the shrimp to the pot and stir well. Cook for an additional 5 minutes, or until the shrimp turn pink and are fully cooked.

  7. Serve:
    Ladle the jambalaya into serving dishes and enjoy hot. It’s a complete and satisfying meal your whole family will enjoy.
