Ingredients (Serves 4):

Chicken with Asparagus and Mushrooms

  • 1 teaspoon Thai red chili paste

  • 1 teaspoon fish sauce

  • 1 teaspoon black bean sauce

  • 1 tablespoon oyster sauce

  • ¼ cup chicken broth

  • 600 g chicken breast, cut into strips

  • ½ cup cornstarch

  • 2 cloves garlic, minced

  • 1 tablespoon minced ginger

  • 2 hot chili peppers, sliced

  • 1.5 kg asparagus, trimmed and chopped

  • 1 can sliced mushrooms (or fresh)

  • 1 red bell pepper, sliced

  • 2 green onions, chopped

  • Sesame oil for frying and drizzling

Preparation Steps:

Start by preparing the sauce. In a bowl, mix the Thai chili paste, fish sauce, black bean sauce, oyster sauce, and chicken broth until well combined. Set aside.

Dredge the chicken pieces in cornstarch until fully coated. Heat sesame oil in a large pan or wok and fry the chicken until golden. Once cooked, remove and set aside.

In the same pan, sauté the minced garlic, ginger, and hot chili peppers until fragrant. Add the chopped asparagus and mushrooms. Stir-fry the vegetables until they begin to soften.

Add the sliced red bell pepper, followed by the prepared sauce. Stir everything together until the vegetables are fully coated and cooked through.

Return the chicken to the pan and toss to combine. Finally, add the green onions, stir briefly, and remove from heat.

Serve hot, drizzled with a touch of sesame oil. This dish is best enjoyed fresh and makes a perfect family dinner that combines bold Asian flavors with nourishing ingredients.
