Ciabatta Bread with Meatballs

 

For the Bread:

  • 1 cup all-purpose flour

  • 1 cup whole wheat flour

  • 2 tablespoons vegetable oil

  • ½ teaspoon salt

  • ¾ cup warm water

For the Meatballs:

  • 250 grams ground meat (beef or lamb)

  • 1 finely chopped onion

  • 1 tablespoon finely chopped parsley

  • ¼ teaspoon black pepper

  • ¼ teaspoon salt

  • 1 egg

  • 2 tablespoons grated Parmesan cheese

  • 2 tablespoons breadcrumbs

For the Sauce:

  • 2 tablespoons olive oil

  • 1 finely chopped onion

  • 1 chili pepper (optional)

  • ¼ teaspoon paprika

  • 2 tomatoes, peeled and diced

  • ¼ teaspoon dried coriander

  • 1 teaspoon chopped mint


Preparation:

1. Prepare the Sauce:
Heat olive oil in a skillet. Once hot, add the chopped onion, chili pepper, salt, paprika, dried coriander, and diced tomatoes. Stir everything together and let it cook over medium heat for about 10 minutes until the sauce thickens and the ingredients blend well. Add the chopped mint toward the end and stir.

2. Make the Meatballs:
In a bowl, combine the ground meat, onion, parsley, black pepper, salt, egg, Parmesan, breadcrumbs, and a drizzle of olive oil. Mix well until all ingredients are fully combined. Shape the mixture into small balls and place them on a baking tray.

Preheat the oven to 180°C (350°F) and bake the meatballs for 30 minutes until golden and cooked through.

3. Prepare the Ciabatta Bread:
In a mixing bowl, combine the all-purpose flour, whole wheat flour, oil, salt, and warm water. Knead the dough until smooth and elastic. Cover the bowl and let the dough rest in a warm place for about 30 minutes, or until it rises.

Once risen, divide the dough into several small balls. On a floured surface, roll each ball into a flat oval shape. Heat a pan with a little oil, and cook each piece of dough for 1 minute per side, then finish by placing it directly over the open flame of the stove to puff up and brown slightly.

4. Serve:
Arrange the warm ciabatta bread on a serving platter. Place the freshly baked meatballs over the bread, and generously spoon the warm tomato sauce on top.
