Cream Cheese Cookies – Recipe & Preparation Method

Cream cheese cookies are a delightful and easy-to-make treat that women around the world often prepare for holidays, special occasions, and family gatherings. Beloved for their soft texture and unforgettable flavor, these cookies also allow for a variety of creative shapes and decorations.

Ingredients for Cream Cheese Cookies (Serves 8):

Cream Cheese Cookies

 

  • 2½ cups all-purpose flour

  • ½ teaspoon salt

  • 1 cup butter (softened)

  • 85 g cream cheese

  • 1 cup sugar

  • 1 egg yolk

  • ½ teaspoon rosewater infused with saffron threads

For the pistachio filling:

  • 140 g shelled pistachios

  • 125 g powdered sugar

  • 120 g sugar syrup (qatir)


How to Make Cream Cheese Cookies:

Start by combining the flour and salt in a bowl and mixing well to ensure even distribution.

In a separate bowl, beat the butter and cream cheese together until the mixture becomes light and fluffy. Add in the sugar, egg yolk, and saffron-infused rosewater. Mix until smooth, then gradually fold in the flour mixture to form a soft dough.

Cut and shape the dough as desired—you can also use a cookie press to create decorative patterns.

Place the shaped cookies on a nonstick baking sheet and bake in a preheated oven at 350°F (175°C) for about 15 minutes or until lightly golden.

While the cookies bake, prepare the pistachio filling. Soak the pistachios in hot water for 15 minutes, then peel off the skins. Place them in an oven preheated to 150°C (300°F) for 10 minutes to dry them out slightly.

Grind the pistachios with the powdered sugar, then gradually add the sugar syrup while continuing to blend until a thick, smooth paste forms. The mixture should be cohesive but not runny.

Once the cookies are baked and cooled, sandwich a small amount of pistachio paste between two cookies. Serve to children and loved ones for a delicious and festive treat.
