Goat Leg Roast – Traditional Recipe and Cooking Method

The goat leg roast is a rich, hearty dish typically reserved for special occasions, festive gatherings, or large family feasts. It's beloved across the Arab world for its deep flavor and nutritional value.

This dish is renowned for its high protein content, which supports muscle growth and overall vitality. Additionally, it’s packed with essential minerals such as iron, zinc, copper, calcium, and potassium. Some traditional beliefs also credit this meal with promoting cardiovascular health by widening arteries and improving blood flow.

Due to the complexity of preparation and the long cooking time required, goat leg roast is usually made only for significant events or when hosting guests.

Ingredients for 10 servings:

Goat Leg Roast

 

  • 1 whole goat leg (approximately 8 kilograms)

  • 3 large onions

  • 2 tablespoons of lemon juice

  • 2 whole nutmegs

  • 1 tablespoon of ground cinnamon

  • Ground cardamom to taste

  • 2 crushed bay leaves

  • Salt to taste

  • Black pepper to taste

  • 1 teaspoon of Worcestershire sauce

  • 1 teaspoon of soy sauce

  • 2 tablespoons of clarified butter or ghee

Preparation Steps:

Begin by blending the onions, tomatoes, lemon juice, nutmeg, cinnamon, ground cardamom, and ground bay leaves in a food processor until you get a smooth, well-combined mixture.

Next, add salt, black pepper, Worcestershire sauce, soy sauce, and the ghee to the mixture. Stir well to create a smooth, fragrant marinade.

Using a sharp knife, carefully score the goat leg with a few deep cuts to allow the marinade to penetrate the meat. Place the leg on a baking tray lined with parchment paper to prevent sticking.

Pour the marinade generously over the meat, making sure to rub it into all the crevices and cuts. Cover the entire tray tightly with aluminum foil.

Preheat the oven to 180°C (356°F), and roast the goat leg for about 3 hours, or until the meat becomes tender and juicy.

Once fully cooked, remove the foil and return the tray to the oven for an additional 10 minutes to allow the surface to brown and form a delicious crust.

Finally, transfer the goat leg to a large serving platter and present it with your choice of side dishes—salads, dips, or warm bread—to let your family enjoy the savory, succulent flavors of this traditional feast.
