½ head of red cabbage, shredded

1 kg (2.2 lbs) carrots, peeled and sliced into ½-inch strips

2 cloves of garlic, unpeeled

¼ cup tahini (sesame paste)

2 tablespoons lemon juice

½ cup hot water (as needed)

Preparation Steps:
Start by tossing the shredded cabbage and carrot slices in a large bowl with 2 tablespoons of canola oil until evenly coated.
Spread the vegetables onto a baking sheet. Sprinkle with red pepper flakes, salt, and black pepper.
Place the unpeeled garlic cloves in a small piece of foil, drizzle them with the remaining ¼ tablespoon of oil, wrap them tightly, and place them on the same baking sheet.
Roast in a preheated oven at 475°F (245°C) for about 10 minutes until the vegetables are slightly charred and tender.
Remove the garlic from the foil, peel, and mash it into a smooth paste.
In a small bowl, whisk together the mashed garlic, tahini, lemon juice, honey, salt, and black pepper. Gradually add the hot water while stirring until the sauce reaches a thick, smooth consistency.
To serve, arrange the grilled cabbage and carrots in a serving dish, drizzle with the garlic-tahini dressing, and garnish with freshly chopped parsley.
