Kesari Chicken Biryani – Recipe and Cooking Guide

Kesari Chicken Biryani is a flavorful and aromatic variation of traditional Indian biryani, popular across India and Southeast Asia. This delightful dish is known for its rich taste and simplicity, making it a favorite choice for lunch in many households.

Ingredients for Kesari Chicken Biryani (Serves 5):

Kesari Chicken Biryani

 

  • 700 grams of boneless chicken thighs

  • 80 grams of ghee (clarified butter)

  • A pinch of green cardamom powder

  • 2 bay leaves

  • 2 tablespoons ginger paste

  • 1 tablespoon garlic paste

  • 2 onions, thinly sliced

  • 3 ripe tomatoes, chopped

  • ½ teaspoon ground black pepper

  • A few strands of saffron

  • 750 grams of rice

  • 2 tablespoons butter

  • 1 can of cream

  • 1 small red onion (for garnish)

  • Fresh mint leaves (for garnish)


Preparation Method:

Start by heating the ghee in a deep, heavy-bottomed pot. Once hot, add the sliced onions and sauté them until soft and translucent. Then, stir in the ginger and garlic paste, letting the mixture cook for around three minutes.

Next, add the chopped tomatoes and stir briefly. Lower the heat and add the chicken pieces, allowing them to cook gently. As the chicken nears doneness, season with salt and pepper, then add the cardamom powder and a cinnamon stick if desired.

In a separate pot, bring water to a boil and add the rice. Cook until it’s half done, then drain the water and layer the rice on top of the chicken in the first pot.

In a separate pan, melt the butter, then stir in the cream and saffron. Mix well over low heat until everything is blended. Pour this saffron cream mixture evenly over the rice and chicken.

Top the biryani with chopped mint leaves and slices of red onion for a fresh, fragrant finish. Cover the pot tightly and let it simmer over very low heat for fifteen minutes. Once done, turn off the heat but keep the lid closed for another five minutes to allow the flavors to settle.
