Kibbeh Fatteh is a delicious and hearty dish enjoyed throughout the Arab world, especially in Syria.

This dish combines two beloved staples of Syrian cuisine: fatteh (a layered dish of bread and yogurt) and kibbeh (minced meat with bulgur), bringing them together in one flavorful meal that stands out for its rich taste and texture.

It’s also an energy-rich dish, providing plenty of calories to fuel the body.

Ingredients for Kibbeh Fatteh (serves three people):

For the kibbeh:

  • 500 grams lamb

  • 2¼ cups fine bulgur

  • 1 onion, finely chopped

  • 1 teaspoon salt

  • 1 teaspoon seven-spice mix

For the fatteh:

  • 2 tablespoons vegetable oil

  • 2 potatoes, diced

  • 2 pita breads

  • 250 ml plain yogurt

  • 3 tablespoons chopped coriander

  • 1 clove garlic, minced

  • Juice of 1 lemon

  • ½ cup vegetable oil

For garnish:

  • 1 teaspoon paprika

  • Toasted pine nuts, to taste

How to Cook Kibbeh Fatteh:

Start by preparing the kibbeh. Soak the bulgur in water for 2 hours, then drain well.

Place the soaked bulgur and lamb in a food processor with the salt, onion, and seven-spice mix. Blend until the mixture forms a very smooth, cohesive dough.

Shape the mixture into small, round balls.

Heat the vegetable oil in a deep pot over medium heat. Once the oil is hot, fry the kibbeh balls until cooked through and golden brown. Set aside on paper towels to drain excess oil.

Next, prepare the fatteh. Heat a bit of vegetable oil in a skillet and lightly sauté the minced garlic and chopped coriander until fragrant.

In a bowl, combine the yogurt with the garlic and coriander mixture, stirring until well blended.

Separately, fry the diced potatoes in hot oil until crispy and golden, then remove and drain on paper towels. Fry the pita bread pieces until crispy as well.

To assemble the dish, spread the fried potatoes in the base of a serving dish. Top with crispy pita bread, then arrange the fried kibbeh balls over them. Pour the yogurt mixture on top, and garnish with paprika and toasted pine nuts.

Serve immediately and enjoy this flavorful, traditional dish with your family!
