Kofta Hassan Pasha – Recipe and Cooking Method
Kofta Hassan Pasha is a rich and flavorful dish from the heart of Turkish cuisine, known for its savory layers and satisfying texture.
Though it bears resemblance to the classic Dawood Basha dish, Kofta Hassan Pasha has its own unique preparation and flavor profile, making it a beloved staple in both Turkish and Arab households—especially served during lunch.
Ingredients (Serves 5):
For the Kofta:

500 grams of ground lamb

2 finely chopped onions

4 cloves of garlic

1 teaspoon of mixed spices

2 tablespoons of vegetable oil

½ cup of grated carrot

2 tablespoons of breadcrumbs
For the Sauce:

2 cloves of minced garlic

4 grated tomatoes
-
2 tablespoons of tomato paste

A small amount of basil (optional)

1 beef bouillon cube
-
Salt to taste

Black pepper to taste

1 tablespoon of oil

A bit of water
For the Mashed Potatoes:

4 boiled and mashed potatoes
-
Mozzarella cheese (to taste)

½ cup of cooking cream or milk

1 tablespoon of butter
-
Salt to taste
-
A pinch of white pepper
How to Prepare Kofta Hassan Pasha:
Start by preparing the kofta. In a large bowl, combine the chopped onions, garlic, mixed spices, vegetable oil, grated carrots, and breadcrumbs. Add the ground lamb and mix thoroughly until the mixture becomes cohesive.
Shape the mixture into medium-sized balls, then use your thumb to press a deep indentation into each one.
Place the kofta balls onto a baking tray and bake in a preheated oven at 180°C (350°F) for about 10 minutes. Once partially cooked, transfer them to a heat-resistant Pyrex dish.
To make the sauce, heat the oil in a saucepan and sauté the garlic. Add the grated tomatoes, tomato paste, bouillon cube, basil (if using), salt, pepper, and a little water. Let it simmer until it thickens and becomes fragrant, then remove it from the heat.
For the mashed potatoes, place the boiled potatoes in a bowl. Add the cream or milk, butter, salt, and white pepper. Mix until smooth and creamy.
Form the mashed potatoes into small mounds and place one on top of each kofta. Sprinkle with mozzarella cheese.
Pour the prepared tomato sauce around the kofta and place the dish back into the oven. Bake for 15 minutes, or until the kofta is fully cooked, the cheese is melted, and the potatoes are golden on top.
Serve hot in individual plates, ideally with a side of rice or fresh salad. This beautifully layered, comforting dish is sure to impress both family and guests.
