Kubbeh Harira – Recipe and Cooking Instructions
Kubbeh Harira is a rich and flavorful dish from the Levantine cuisine. Known for its hearty texture and deep flavors, this meal offers a substantial caloric content and provides a strong energy boost to the body.

Ingredients (Serves 4):

Juice of 3 lemons

600 grams pre-prepared kubbeh (meat-stuffed bulgur dumplings)

½ cup vegetable oil (for frying or roasting the kubbeh)
Cooking Instructions:
Start by heating the oil in a large pot. Once hot, add the chicken pieces and sauté until they develop a golden-brown color. Then, add the chopped onions and cook until softened.
Add the tomato paste, stir until well blended, then incorporate the chopped tomatoes, celery, all the spices, bouillon cubes, hot water, and the drained chickpeas. Mix everything thoroughly.
Add the green lentils, cover the pot, and let it simmer over low heat until the chicken and chickpeas are fully cooked and tender.
Remove the chicken pieces from the pot, debone them, shred the meat, and set it aside. Return to the pot and add the coriander and vermicelli noodles. Stir gently over low heat until the noodles soften.
Return the shredded chicken to the pot, then stir in the lemon juice and beaten eggs, mixing until the soup gains a slightly creamy consistency.
In a separate pan, either fry or roast the kubbeh, depending on your preference. Once cooked, add the kubbeh to the soup and simmer for about 15 minutes, allowing the flavors to meld and the broth to thicken.
Finally, pour the Kubbeh Harira into serving bowls and enjoy it hot with your family. Its bold taste and nourishing ingredients make it a perfect comfort dish.
