Mexican Salad – Flavorful, Nutritious, and Easy to Prepare
Mexican salad is one of the most beloved and well-known salads across the globe. Originating in Mexico, this vibrant dish has spread internationally, becoming a staple on menus thanks to its bold flavors, nutritional value, and simplicity.

1 red bell pepper, diced

200 g cherry tomatoes, halved

Preparation Steps:
Start by placing the diced red bell pepper in an oiled baking tray and roast it in a preheated oven for about 10 minutes until soft. Remove the skin, mash it gently, and set aside.
Season the chicken fillets with salt and a drizzle of olive oil, then coat them with Mexican spices. Place the fillets in a baking tray, add a bit more oil if needed, and roast them in the oven for 15 minutes until fully cooked. Slice the chicken into thin strips once cooled.
In a large serving bowl, arrange the chicken strips. Add the corn, kidney beans, cilantro, green onions, and chopped onion over the chicken.
In a small bowl, whisk together the vinegar and lemon juice. Drizzle this dressing over the salad base.
