Moroccan Bread – Recipe & Preparation Method

Moroccan Bread is a delicious and distinctive type of bread that belongs to the rich and flavorful Moroccan cuisine.

This bread is known for its ease of preparation and is typically served alongside a wide variety of main dishes.

It is widely popular in Morocco and across the Maghreb region, and it carries significant nutritional value.


Ingredients for Moroccan Bread (Serves 4):

For the dough:

  • 2¼ cups all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon sugar

  • 1 teaspoon powdered milk

  • 1 tablespoon instant yeast

  • ¼ cup vegetable oil

  • ¼ cup melted ghee or butter

  • 1 cup warm water

For brushing the bread:

  • 1 egg

  • 1 teaspoon vanilla extract

  • ½ cup liquid milk

  • ¼ cup water

  • ¼ teaspoon vinegar

For garnish:

  • ¼ cup toasted sesame seeds

  • ¼ cup nigella seeds (black cumin)

For greasing the baking tray:

  • 1 teaspoon semolina

  • 1 teaspoon flour


How to Make Moroccan Bread:

Start by preparing the dough. In a stand mixer or mixing bowl, combine the flour, salt, sugar, powdered milk, and yeast. Mix well until the dry ingredients are evenly combined.

Gradually add the vegetable oil, melted ghee, and warm water. Mix or knead for about 10 minutes until you achieve a soft, elastic dough.

Place the dough in a greased bowl, cover it, and let it rest for about an hour until it doubles in size.

Once risen, divide the dough into four equal portions and shape each into a ball. Roll each ball into a medium-thick circle.

Sprinkle the greased baking tray with semolina and flour, then place the dough circles on it. Cover the tray with a clean cloth and let it rest for another hour.

Meanwhile, prepare the egg wash by whisking together the egg, vanilla extract, milk, water, and vinegar in a bowl.

Brush the surface of each bread circle with the mixture, then sprinkle sesame seeds and nigella seeds generously over the top.

Preheat your oven to 220°C (430°F). Bake the bread for 5 minutes, just until it begins to puff up.

Then, place a small tray filled with water and ice on a lower rack in the oven, directly beneath the bread tray. This will create steam that helps give the bread a perfect texture.

Once golden and baked through, remove the bread from the oven and serve warm with your favorite main dishes.
