  • 1⅓ cups sugar

  • 5 eggs

  • ¼ cup flour

  • 2 tablespoons lemon juice

  • 2 teaspoons vanilla extract

  • ¾ cup sour cream

Preparation Method:

  1. Prepare the crust:
    In a mixing bowl, combine crushed biscuits, melted butter, and ground almonds. Mix until the crumbs are evenly coated with butter.

  2. Press the crumb mixture firmly into the bottom and halfway up the sides of a springform pan. Bake in a preheated oven at 180°C (356°F) for 10 minutes. Remove and let it cool for about 5 minutes.

  3. Make the filling:
    In a large bowl, beat the cream cheese until smooth and fluffy. Gradually add the eggs one by one, mixing well after each addition. Add the vanilla, then blend in the flour, lemon juice, and sour cream. Mix on medium speed for about 30 minutes or until the batter is creamy and well combined.

  4. Assemble and bake:
    Pour the cream cheese mixture over the pre-baked crust in the pan. Smooth the top with a spatula. Bake in a preheated oven at 180°C (356°F) for about 60 minutes or until the center is just set and the edges are slightly golden.

  5. Chill and serve:
    Once baked, remove the cheesecake from the oven and allow it to cool slightly at room temperature. Then refrigerate for at least 4 hours—preferably overnight—for the best texture and flavor.

  6. Final touch:
    Once chilled and set, remove from the springform pan, slice, and serve.
