Omani Chicken Qabuli – Traditional Recipe & Cooking Method

Omani Chicken Qabuli is a rich and flavorful dish from the heart of Oman, and it holds a special place in the culinary traditions of the Gulf region. Known for its fragrant spices and layered textures, this beloved meal is commonly served during large gatherings, family feasts, and formal occasions across the Sultanate.

Aside from its unforgettable taste, Qabuli is also nutritionally dense. A 300-gram serving contains approximately:
933 calories, 51g protein, 92g carbohydrates, and 39g fat.


Ingredients (Serves 4):

Omani Chicken Qabuli

 

  • 8 pieces of chicken

  • 12 cups of water

  • 3 small sticks of cinnamon

  • 1 teaspoon of green cardamom pods

  • 1 teaspoon of whole cloves

  • 1 teaspoon of whole black peppercorns

  • 3 tablespoons of Omani spice mix (Baharat)

  • 3 chicken bouillon cubes

  • 3 tablespoons of clarified butter or ghee

  • 1 can of chickpeas, drained

  • 600g of Basmati rice, rinsed and drained

  • 4 tablespoons of golden raisins (Sultanas)

  • 1½ teaspoons of saffron threads, soaked in 1¼ cups of rose water


Preparation Steps:

  1. Boil the Chicken:
    Place the chicken pieces in a large pot with the water and bring to a boil. Skim off the foam that forms on the surface.

  2. Add the Spices:
    Once the water is clear, add cinnamon sticks, cardamom pods, cloves, black peppercorns, Omani spice mix, and chicken bouillon cubes. Stir gently to combine and let it simmer for 30 minutes until the chicken is fully cooked.
    Remove the chicken and set it aside. Strain the broth and keep 9 cups of it for the rice.

  3. Cook the Rice:
    Bring the 9 cups of broth to a boil in a separate pot. If there’s not enough, you may add a bit of water.
    Add the rinsed Basmati rice and boil for about 10 minutes, then drain the rice and set it aside.

  4. Prepare the Garnish:
    In a large pot, melt the ghee over medium heat. Add the chickpeas and raisins. Sauté until the raisins swell and the chickpeas absorb the flavors. Remove from heat and set aside.

  5. Layer the Qabuli:
    In the same pot, place the cooked chicken pieces first. Layer the partially cooked rice over the chicken.
    Drizzle the saffron-infused rose water evenly across the surface. Finally, top with the sautéed chickpeas and raisins.

  6. Final Steam:
    Cover the pot tightly and cook on low heat for 25 minutes. This allows the rice to steam and absorb all the rich aromas and flavors.

  7. Serve:
    Gently fluff and plate the Qabuli, ensuring each serving includes a balance of rice, chicken, chickpeas, and raisins. Serve hot and enjoy with family or guests.
