Pappa Roti – Recipe & Cooking Method – Coffee Bun Tutorial

Pappa Roti, also known as the "coffee bun," is a soft, buttery bread originally from Mexico. Over time, it has gained worldwide popularity, particularly as a delicious companion to a cup of coffee. Its signature coffee-infused topping gives it a rich aroma and flavor, hence the name "coffee bread."

This delightful bread is loved for its unique texture, memorable taste, and the nutritional value it offers, including energy and essential nutrients.


Ingredients for Pappa Roti (Serves 5):

For the topping:

  • 100 g melted butter

  • 1 cup powdered sugar

  • ¼ cup brown sugar

  • 1⅔ cups all-purpose flour

  • 3 eggs, beaten

  • ½ teaspoon ground cinnamon

  • 2 teaspoons instant coffee dissolved in 1 cup water

For the dough:

  • 3⅔ cups all-purpose flour

  • 2½ tablespoons powdered milk

  • ½ cup sugar

  • 1 teaspoon salt

  • 1 teaspoon baking powder

  • 1 cup yeast (instant yeast)

  • 300 ml warm water

  • 1 cup melted butter

  • 1 egg, beaten

For the filling:

  • 150 g frozen butter, cut into cubes


How to Prepare Pappa Roti (Coffee Bun):

Begin by preparing the dough. In an electric mixer bowl, combine the flour, powdered milk, sugar, yeast, salt, and baking powder. Mix for about 1 minute.

Add the beaten egg and warm water to the mixture and knead for around 10 minutes until a dough forms. Add the melted butter and continue kneading until the dough becomes soft and elastic.

Divide the dough into equal-sized balls and let them rest for 15 minutes.

Flatten each dough ball slightly, create a small well in the center, and place a cube of frozen butter inside. Seal the dough tightly and shape it into a smooth round bun.

Arrange the buns on a greased baking tray, cover with plastic wrap, and allow them to rise until doubled in size.

Meanwhile, prepare the topping by mixing the melted butter, powdered sugar, brown sugar, flour, cinnamon, dissolved coffee, and beaten eggs until smooth and well combined.

Transfer the topping into a piping bag and pipe a swirl over each bun.

Bake in a preheated oven at 200°C (390°F) for about 15 minutes, or until the buns are golden and slightly crispy on top.

Optionally, turn on the broiler for a minute or two to lightly brown the tops.
