Penne with Seafood – Recipe and Cooking Method

Penne with seafood is a classic Italian coastal dish, celebrated for both its rich nutritional value and simplicity of preparation.
It’s a staple in many seaside cities across Italy and offers the body a powerful combination of health benefits, especially due to its high content of phosphorus and omega-3 fatty acids.

Ingredients for Penne with Seafood (Serves 4):

1 pack of spaghetti (or penne)

500 g shrimp

250 g calamari
-
1 kg mussels

1 small red onion
-
1 green chili pepper, finely chopped

3 garlic cloves, minced

4 tomatoes, finely chopped

¼ cup chopped parsley
-
2 tablespoons lemon juice
-
¼ cup olive oil
-
¼ cup fish stock
-
1 zucchini, sliced
-
A pinch of salt
-
½ cup water
For garnish:
-
5 fresh basil leaves
-
A dash of black pepper
How to Prepare Penne with Seafood:
Start by cleaning the shrimp, mussels, and calamari thoroughly. Cut the calamari into even rings.
Chop the onion and place it in a large pot with water and lemon juice. Add the mussels and cook over medium heat for about 5–8 minutes, or until the mussels open.
Remove the mussels from the pot. Extract the meat from half of them and leave the remaining ones in their shells for garnish.
Meanwhile, boil the pasta in salted water with a drizzle of olive oil. Once al dente, drain and set aside.
In a skillet, heat the remaining olive oil over medium heat. Add the calamari rings and shrimp. Sauté for about 5 minutes until the shrimp turn a bright orange color.
Add in the mussels, tomatoes, zucchini, fish stock, parsley, garlic, chili pepper, salt, and black pepper. Stir gently and let the mixture simmer for another 5 minutes to allow the flavors to meld and the vegetables to soften.
To serve, place the pasta in a large serving dish, spoon the seafood mixture over it, and gently combine. Garnish with fresh basil leaves and a sprinkle of black pepper.
Serve immediately and enjoy the taste of the Mediterranean with your family.
