Rishta with Lentils – Recipe and Cooking Method

Rishta with lentils is a delicious and wholesome dish, known for being easy to prepare while offering numerous nutritional benefits for the body.

A 300-gram serving of this meal provides approximately 495 calories, 26 grams of protein, 84 grams of carbohydrates, and 7.5 grams of fat.

Ingredients for Serving Four People:

Rishta with Lentils

 

  • 2 tablespoons of vegetable oil

  • 300 grams of finely chopped onion

  • 3 tablespoons of tomato paste

  • 1 cup chopped parsley

  • 1 cup chopped spinach leaves

  • 1 cup chopped dill

  • 1 cup chopped scallions

  • 1 cup chopped fresh coriander

  • 1 cup finely chopped spring onions

  • 4 cups of water

  • 2 chicken bouillon cubes (e.g., Maggi)

  • ½ cup dried chickpeas, soaked in cold water for 2 hours

  • ½ cup speckled beans, soaked in water for 2 hours

  • ½ cup red kidney beans, soaked in cold water for 2 hours

  • ½ cup black beans, soaked in cold water for 2 hours

  • 1 teaspoon ground turmeric

  • 1 cup green lentils

  • 400 grams of egg noodles (rishta)

  • 1 tablespoon vinegar

  • ½ cup chopped mint

  • 1 onion, sliced and fried until golden (for garnish)

Cooking Instructions:

Begin by heating the vegetable oil in a large pot. Add the sliced onion and sauté until softened, then remove and set aside for garnishing.

In the same pot, sauté the chopped onions until they become translucent. Add the tomato paste and stir briefly, then incorporate the parsley, dill, coriander, and chopped scallions. Stir until the greens are wilted.

Next, pour in the water, add the bouillon cubes, chickpeas, and all types of soaked beans. Stir well to combine and bring the mixture to a boil.

Once boiling, add the green lentils. Let the stew simmer over medium heat. If it becomes too thick, you can add more water as needed.

When the lentils and beans are almost tender, stir in the rishta noodles, vinegar, and mint. Reduce the heat and let it simmer gently until the noodles are fully cooked.

Finally, ladle the rishta into serving bowls, garnish with the reserved fried onions, and serve warm to your family for a hearty and satisfying meal.
