Hamour Fish Sayadiyah (Spiced Fish with Rice)
Sayadiyah Hamour is a flavorful seafood dish popular in many coastal regions around the world. It combines aromatic spices, tender hamour fish fillets, and perfectly seasoned rice into a hearty and nutritious meal.

Ingredients for Sayadiyah Hamour (Serves 4):

2½ cups basmati rice

500 g hamour fish fillets (or any firm white fish)

1 tablespoon ground cumin

1 tablespoon ground coriander

1 teaspoon turmeric

½ teaspoon ground cardamom

½ teaspoon ground cinnamon

½ teaspoon black pepper

2 teaspoons salt

½ cup corn or vegetable oil

4 tablespoons flour
-
2 onions, thinly sliced

Handful of mixed nuts (almonds, pine nuts, or cashews) for garnish (optional)
How to Prepare Sayadiyah Hamour:

Prepare the rice:
Wash the rice thoroughly and soak it in water for 15 minutes. Drain and set aside. -
Mix the spices:
In a small bowl, combine cumin, coriander, turmeric, cardamom, cinnamon, black pepper, and salt. Mix well. -
Season the fish:
Sprinkle some of the spice mixture over the fish fillets to coat them evenly. -
Coat the fish:
Lightly dredge the fish fillets in flour, making sure each piece is covered with a thin layer. -
Fry the fish:
In a large pot, heat the oil over medium heat. Fry the fish until golden on both sides. Remove and set aside on a plate. -
Sauté the onions:
In the same oil, add the sliced onions and sauté until soft and lightly browned. -
Layer the ingredients:
Return the fried fish to the pot, placing it gently over the onions. Add the soaked rice on top. Stir lightly to mix the flavors without breaking the fish. -
Cook the rice:
In a separate saucepan, heat 3½ cups of water. Stir in any remaining spice mix, then pour the hot water gently over the rice and fish in the main pot. -
Simmer:
Bring everything to a boil, then reduce the heat to low. Cover the pot and let it simmer gently for about 25–30 minutes, or until the rice is fully cooked and the liquid is absorbed. -
Serve:
Turn the pot over gently onto a large serving platter or fluff the rice carefully with a fork. Garnish with toasted nuts if desired.
