Sweet potato cake is a unique and delightful dessert, notable for its unexpected use of mashed sweet potatoes, which give it a moist texture and distinct flavor.

Ingredients (Serves 4):

Sweet Potato Cake

 

  • ¾ cup of raisins

  • 1 tablespoon of liquid vanilla extract

  • 4 eggs

  • 2 cups of sugar

  • 1 cup of vegetable oil

  • 2 cups of mashed sweet potatoes

  • 3 cups of flour

  • 2 tablespoons of baking powder

  • ½ teaspoon of salt

  • 2 teaspoons of ground cinnamon

  • ¼ teaspoon of ground nutmeg

  • ⅓ cup of milk

For the Topping:

  • ½ cup of brown sugar

  • 4 tablespoons of butter

  • 3 tablespoons of heavy cream

How to Prepare Sweet Potato Cake:

Begin by soaking the raisins in a small amount of the vanilla extract in a bowl. Let them sit for about one hour to absorb the flavor.

In the meantime, place the eggs and sugar in a blender or mixing bowl and beat for about three minutes. Add the oil and the remaining vanilla, and mix until smooth.

Drain the raisins and set them aside.

In a separate bowl, combine one-third of the flour with the baking powder, salt, cinnamon, nutmeg, and mashed sweet potatoes. Stir well until the mixture is smooth and evenly blended.

Add the second third of the flour along with half of the milk, stirring until incorporated. Then add the final third of the flour and the remaining milk, mixing thoroughly to achieve a smooth and lump-free batter.

Fold in the soaked raisins, then pour the batter into a greased and floured cake pan.

Preheat the oven to 350°F (approximately 180°C) and bake the cake for one hour. Once done, remove from the oven and allow it to cool completely.

For the topping, combine the brown sugar, butter, and cream in a saucepan. Bring to a boil over high heat, stirring continuously. Let the mixture boil for about three minutes until thickened.

Pour the hot mixture over the cooled cake, spreading it evenly across the surface. Allow the topping to set and cool before serving.
