Swiss chard pie is a delicious and wholesome dish commonly found across the Arab world. It’s well-loved for its rich flavor and nutritional value, offering a variety of minerals and vitamins that support overall health.

It’s a simple recipe, often prepared for lunch by home cooks thanks to its ease and the availability of its ingredients.

Ingredients (Serves 4):

Swiss Chard Pie

 

For the Dough:

  • ¾ teaspoon of salt

  • ¾ cup of all-purpose flour

  • ¾ cup of whole wheat flour

  • ¾ teaspoon of black pepper

  • ⅓ cup of olive oil

  • 5 tablespoons of cold water

For the Filling:

  • 2 eggs

  • 1 cup of ricotta cheese

  • 500 grams of chopped Swiss chard

  • 2 tablespoons of minced garlic

  • 2 teaspoons of olive oil

  • ⅓ cup of crumbled feta cheese

  • 1 teaspoon of lemon zest

  • ¼ cup of chopped red bell pepper

  • ½ cup of sliced green olives

How to Prepare Swiss Chard Pie:

1. Make the Dough:
In a large bowl, mix the all-purpose flour, whole wheat flour, salt, and black pepper until well combined. Add the olive oil and cold water, and knead until a soft dough forms. Wrap the dough in plastic and chill for 15 minutes.

Spread the dough in an oiled tart pan lined with parchment paper, then bake it in a preheated oven at 400°F (200°C) for about 20 minutes, or until the crust is golden brown. Remove and let it cool.

2. Prepare the Filling:
Blanch the Swiss chard in boiling water until soft, then drain well and set aside.

Heat olive oil in a large skillet, lightly sauté the garlic, then add the Swiss chard and stir for about 2 minutes over medium heat. Add a spoonful of water and cook until it evaporates, then set aside.

In a separate bowl, whisk together the eggs, ricotta, feta, bell pepper, olives, and lemon zest. Add salt and black pepper to taste.

Combine the sautéed chard with the egg and cheese mixture and stir well.

3. Assemble and Bake:
Spread the filling over the pre-baked crust. Return the tart to the oven and bake until the filling is firm and golden on top.

4. Serve:
Allow the pie to cool slightly before slicing and serving. Enjoy this nutritious and flavorful dish with your family—it pairs well with salad or yogurt on the side.
