Swiss Chicken Chalet is a hearty main course originating from the refined cuisine of Switzerland. Known for its rich flavor and balanced seasoning, this dish quickly spread from its alpine home to dining tables across the globe.

1 whole chicken (about 800 g), backbone removed

1 flatbread, cut into four pieces

How to Prepare Swiss Chicken Chalet:

Prepare the chicken:
Wash the whole chicken and remove the backbone. Place it flat in a baking dish or roasting pan, skin side up. -
Make the sauce base:
In a saucepan, combine the water, tomato juice, chicken stock cube, grated ginger, onion powder, and bay leaves. Stir to blend. -
Add flavorings:
Stir in the paprika, sugar, salt, dried basil, chopped parsley, chicken spices, Worcestershire sauce, grape vinegar, taco sauce, and a spoon of water. Mix well until smooth. -
Marinate and roast the chicken:
Take one cup of this sauce and use it to marinate the chicken thoroughly. Then roast the chicken in a preheated oven at 200°C (390°F) for 90 minutes or until fully cooked and the skin is golden and crisp. -
Simmer the remaining sauce:
Bring the remaining sauce to a boil over medium heat. Once boiling, reduce to low and simmer for 10 minutes. Remove the bay leaves and stir in the lemon juice. -
Thicken the sauce:
Mix the cornstarch with 1 tablespoon of water. Add this slurry to the sauce, stirring constantly until it thickens into a silky glaze. -
Grill the bread:
Brush both sides of the flatbread pieces with the sauce and toast them on a grill or skillet until lightly crisped and golden. -
Serve:
Plate the roasted chicken, spoon the warm sauce over the top, and serve with grilled bread. Garnish with lemon slices and chopped parsley for a fresh, elegant finish.
