Tomato Rice – A Fragrant and Flavorful Rice Dish

Ingredients for Tomato Rice (Serves 6):

  • 3 tablespoons butter

  • 2 tablespoons vegetable oil

  • 1/2 teaspoon mustard seeds

  • 2 tablespoons curry powder

  • 1 onion, finely chopped

  • 3 garlic cloves, minced

  • 1 teaspoon salt

  • 3 tomatoes, finely chopped

  • 1/4 teaspoon turmeric

  • 4 cups basmati rice, soaked and drained

  • 2 tablespoons chopped fresh coriander

  • 2 tablespoons toasted pine nuts

  • 1 teaspoon ground cumin

Preparation Method:

  1. Start the base:
    In a large, deep pot, melt the butter over medium heat. Add mustard seeds and cumin, and stir for 1 minute until fragrant. Then add the curry powder and stir for 30 seconds to release its aroma.

  2. Sauté the aromatics:
    Add the vegetable oil, chopped onion, garlic, and salt. Cook for about 3 minutes until the onion becomes soft and translucent.

  3. Add the tomatoes:
    Stir in the chopped tomatoes and cook until they begin to soften and break down.

  4. Cook the rice:
    Add 1 cup of water to the pot, then add the soaked and drained rice. Stir everything together, and bring the mixture to a boil over high heat. Allow it to boil for 5 minutes.

  5. Simmer gently:
    Reduce the heat to low, cover the pot tightly, and let the rice cook slowly for about 30 minutes, or until all the liquid is absorbed and the rice is tender.

  6. Garnish and serve:
    Spoon the rice into serving dishes, garnish with fresh coriander and toasted pine nuts. Serve hot, optionally with grilled chicken, lamb, or vegetables.
