Apple cinnamon muffins are a delicious twist on the classic muffin. These are filled with sugar, cinnamon, and finely chopped apples, creating an irresistible aroma and taste—especially when the warm spice of cinnamon meets the natural sweetness of apple. This recipe makes a perfect school snack for kids, packed with nutritious ingredients and delightful flavor.

For the Dough:

  • 3¼ cups all-purpose flour

  • 1 cup warm milk

  • 1 tablespoon active dry yeast

  • ¼ cup sugar

  • 1 medium egg

  • ¼ cup butter

  • 1 teaspoon salt

For the Filling:

  • ¼ cup butter (at room temperature)

  • 1 cup white sugar

  • 1 cup brown sugar

  • 3 tablespoons ground cinnamon

  • ¼ teaspoon ground cloves

  • 2 cups finely chopped and peeled apples

  • Nuts (optional – almonds, pistachios, or walnuts)


How to Prepare Apple Cinnamon Muffins:

Begin by warming the milk (not boiling), then pour it into a large bowl. Add the yeast and stir gently. Add the sugar and mix well until both sugar and yeast are fully dissolved. Let it rest for a few minutes.

Next, add half of the flour to the milk mixture and knead for about two minutes. Then, add the butter and egg, and knead again.

Gradually add the rest of the flour and continue kneading for about 7 minutes until the dough becomes smooth and elastic. Form it into a ball.

Lightly oil a clean bowl, place the dough inside, and cover it with a damp cloth. Let it rise in a warm place for about one hour, or until doubled in size.

While the dough is rising, prepare the filling by combining the sugars, cinnamon, cloves, apples, and nuts in a mixing bowl. Stir until well blended.

In a separate bowl, melt the remaining butter in the microwave.

Once the dough has risen, lightly flour a smooth surface and roll the dough out into a flat sheet.

Line a muffin tray with paper muffin cups.

Cut the dough into long rectangular strips about 2.5 cm wide and ¼ inch thick. Brush each strip with melted butter, then spread the apple-cinnamon filling over it—leaving the edges clean. Roll each strip up like a spring roll and place it inside the muffin cups. Repeat until all dough and filling are used.

Cover the muffin tray with a damp cloth and let the rolls rest again in a warm place for 40 more minutes.

Meanwhile, preheat the oven to 180°C (356°F).

Once ready, brush the tops of the muffins with butter and bake for about 20 minutes, or until golden brown.

Remove from the oven and let them cool. You can optionally drizzle them with a glaze or powdered sugar for an extra touch of sweetness. Serve with a glass of fresh juice or a cup of coffee.
