Ingredients for Avocado Sushi (serves five):
For the rolls:

3 sheets of sushi nori

1 cup quinoa

1⅓ cups water

½ cup rice vinegar

2 tablespoons sugar

2 teaspoons salt

1 ripe avocado, peeled and sliced

½ cup sun-dried tomatoes

3 slices of salami
For the spicy mayo:

2 tablespoons Japanese sushi mayonnaise

2 teaspoons hot sauce

A small amount of sesame oil
How to Make Avocado Sushi:
First, rinse the quinoa thoroughly, then place it in a pot with the water. Bring it to a boil over high heat while stirring continuously. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes until cooked.
Meanwhile, in a separate small saucepan, combine the rice vinegar, sugar, and salt. Heat gently, stirring until the sugar and salt are fully dissolved. Remove from heat and let the mixture cool.
Once the quinoa is cooked, transfer it to a wooden or plastic bowl (avoid metal to prevent reaction with the vinegar). Pour the cooled vinegar mixture over the quinoa and gently stir until well combined. Allow it to cool to room temperature.
Next, place a sheet of nori on a bamboo sushi mat. Spread a thin, even layer of quinoa over the nori. At the edge closest to you, arrange two slices of avocado, followed by sun-dried tomatoes and a slice of salami.
Carefully roll the sushi tightly using the mat, sealing the edge to keep the filling secure. Slice each roll into even pieces and arrange them on a serving plate.
Finally, prepare the spicy mayonnaise by mixing the Japanese mayonnaise, hot sauce, and sesame oil in a small bowl until smooth. Drizzle the spicy mayo over the sushi pieces and serve immediately, letting your family enjoy the unique and delicious flavors.
