Ingredients (Serves 5):
-
1 kg of chicken breast, cut into large cubes
-
1½ cups of plain yogurt
-
2 tablespoons of lemon juice
-
2 tablespoons of garam masala
-
1½ tablespoons of turmeric
-
2 tablespoons of ground cumin
-
125 grams of butter
-
2 tomatoes, chopped
-
4 tablespoons of vegetable oil
-
2 onions, finely chopped
-
Finely chopped garlic
-
⅔ cup of chicken broth
-
1½ cups of heavy cream
-
1½ tablespoons of tomato paste
-
3 tablespoons of crushed almonds
-
1 bunch of fresh coriander
-
3 tablespoons of ginger
-
1 cinnamon stick
-
2 sweet or hot peppers (as preferred)
-
Salt to taste
Cooking Instructions:
Start by preparing the marinade. In a large bowl, mix together the yogurt, lemon juice, turmeric, garam masala, and ground cumin until well combined.
Add the cubed chicken breast to the marinade, stir until the chicken is thoroughly coated, and refrigerate for several hours—ideally overnight—for maximum flavor.
Next, heat the oil in a deep skillet, then add the butter. Once melted, add the chopped onions and sauté until soft. Stir in the ginger and additional cumin, cooking until the onions become translucent.
Add the cinnamon stick, chopped tomatoes, diced peppers, and salt. Continue stirring until the peppers begin to soften.
Transfer this mixture to a deep cooking pot. Add the marinated chicken and stir everything gently. Pour in the chicken broth and bring to a boil over high heat. Once boiling, reduce the heat to low and simmer for 30 minutes.
Then, stir in the heavy cream and tomato paste. Let it simmer for another 15 minutes. Finally, add the crushed almonds and cook for an additional 5 minutes.
Remove from heat, spoon into serving dishes, and garnish with fresh coriander. Serve hot and enjoy the luxurious, creamy flavors of this classic Butter Chicken with your family.
