Chicken in the Roasting Bag – Recipe & Cooking Instructions
Roasting chicken in a bag is a delicious and healthy method of preparation. Chicken is a favorite main dish among both children and adults, known for its high protein content and many health benefits. This method allows the chicken to cook in its own juices, retaining moisture and flavor while requiring minimal added fat.
This recipe serves 2 to 3 people.
Ingredients:

1 whole medium-sized chicken (uncut, skin on)

½ cup plain yogurt

1 tbsp white vinegar

2 tbsp lemon juice
-
½ tsp curry powder

1 tsp salt

¼ tsp black pepper
-
¼ tsp ground cumin
-
2 tbsp olive oil
-
1 tsp paprika (sweet pepper)

2 cloves garlic, crushed
-
Chili flakes or hot sauce (optional, to taste)

Ground cardamom (optional, to taste)

1 large potato, diced into cubes
-
2 carrots, diced into cubes
-
1 onion, cut into quarters
-
4 bay leaves
-
¼ cup fresh coriander (for garnish)
How to Prepare Chicken in the Roasting Bag:
Start by thoroughly washing the whole chicken, leaving it whole and with the skin intact.
In a small bowl, mix together the yogurt and crushed garlic. Stir in the vinegar, lemon juice, salt, cumin, curry powder, black pepper, paprika, olive oil, chili (if using), and cardamom until the mixture is well combined.
Place the marinade in the refrigerator for about 1 hour to let the flavors infuse.
Remove the marinade from the fridge and use a food brush to coat the chicken inside and out thoroughly. Try to rub some of the marinade under the skin for deeper flavor.
Place the marinated chicken into a roasting bag. Add the diced potatoes and carrots (lightly salted), onion quarters, and bay leaves into the bag around the chicken.
Seal the roasting bag tightly using the provided tie or heat-resistant string. Use a small pin or toothpick to poke a few holes in different areas of the bag to allow steam to escape.
Place the bag in a baking dish or tray. Add 1 large cup of water to the bottom of the tray (outside the bag) to prevent burning and add moisture during cooking.
Bake in a preheated oven at 180°C (356°F) for about 1.5 hours, or until the chicken is fully cooked and the skin is golden brown.
Once done, carefully remove the roasting bag from the oven. Open the bag with caution to avoid steam burns.
Transfer the chicken to a serving dish. Arrange the cooked vegetables (potatoes, carrots, onions) around it and garnish with fresh coriander.
