For the chicken:

  • 1.5 kg boneless, skinless chicken breasts

  • 2 teaspoons olive oil

  • 2 teaspoons garam masala

  • 2 teaspoons curry powder

  • ½ teaspoon salt

  • ½ teaspoon black pepper

For the sauce:

  • 2 onions, peeled and chopped

  • 6 cloves garlic, peeled

  • 4 tablespoons curry powder

  • 2 teaspoons turmeric

  • 2 teaspoons garam masala

  • 1 teaspoon ground coriander

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • ½ teaspoon cinnamon

  • ½ teaspoon cumin

  • 3 tablespoons olive oil

  • 3 tomatoes, chopped

  • 1 tablespoon fresh ginger

  • ½ cup almonds

  • 1 cup coconut milk

  • 1¼ cups plain yogurt

  • 1 red chili pepper

  • 1 tablespoon brown sugar

For garnish:

  • ½ red bell pepper, sliced

  • Fresh mint leaves, as desired

How to Make Chicken Korma:

First, in a large bowl, combine the chicken breasts with olive oil, garam masala, curry powder, salt, and black pepper. Mix well until the chicken is coated. Cover and refrigerate for several hours or overnight for best flavor.

Once marinated, grill the chicken breasts for 5–6 minutes on each side until golden and cooked through.

To make the sauce, blend the chopped onions and garlic with 1 cup of water in a blender until smooth.

In another bowl, combine the curry powder, turmeric, garam masala, coriander, salt, black pepper, cinnamon, and cumin. Mix well.

Heat the olive oil in a large pan over medium heat, then add the blended onion mixture. Cook, stirring, until it turns light brown.

Add the chopped tomatoes, ginger, coconut milk, almonds, yogurt, red chili, spice mix, and brown sugar. Stir and cook for about 15 minutes until the ingredients are well combined.

Reduce the heat to low and let the sauce simmer gently for 30 minutes, stirring occasionally.

Cut the grilled chicken into bite-sized cubes and add them to the sauce. Continue simmering for another 15 minutes so the flavors meld.

Finally, serve the Chicken Korma hot, garnished with sliced red pepper and fresh mint leaves, so your family can enjoy its rich, creamy taste.
