Chicken Salona is a beloved traditional dish popular across the Arabian Gulf region and Iran. It’s one of the main courses often served for lunch or as part of Iftar meals during the holy month of Ramadan.

Ingredients for Chicken Salona (serves five):

  • 1 whole chicken, cleaned and cut into pieces

  • 3 onions, finely chopped

  • 1 teaspoon minced garlic

  • 1 teaspoon ground ginger

  • 3 tomatoes, diced

  • 2 potatoes, peeled and cubed

  • 1 dried black lime (loomi)

  • 1 chicken bouillon cube

  • 2 tablespoons tomato paste

  • 1 teaspoon mixed spices

  • Salt to taste

  • Black pepper to taste

  • 1 teaspoon paprika

  • ½ teaspoon turmeric

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground cardamom

  • 2 tablespoons olive oil

  • 2 bay leaves

How to Make Chicken Salona:

First, heat the olive oil in a large, deep pot over medium heat. Add the chopped onions and sauté until they become soft and translucent.

Next, add the chicken pieces, minced garlic, ground ginger, bouillon cube, dried black lime, and bay leaves to the pot. Stir well to combine the ingredients.

Then add the mixed spices, salt, black pepper, paprika, turmeric, cinnamon, and ground cardamom, stirring until the chicken is evenly coated with the spices.

After that, add the diced tomatoes, potato cubes, and tomato paste to the pot, stirring until everything is well blended with the chicken.

Pour enough water into the pot to cover all the ingredients. Cover with a lid and let it simmer on low heat until the mixture starts boiling and the chicken and potatoes are fully cooked through.

Finally, ladle the hot Chicken Salona into serving bowls and serve it immediately to your family and friends so they can enjoy its delicious, hearty flavors.
