  • 1 whole chicken

  • 200 grams chopped onions

  • 3 teaspoons tomato paste

  • 1 cup bulgur, rinsed and soaked in water

  • 2 tablespoons oil

  • ½ teaspoon black pepper

  • ½ teaspoon dried coriander

  • ½ teaspoon paprika

  • 1 teaspoon ground cumin

  • 1 teaspoon ground cinnamon

  • 1 chicken bouillon cube

  • 1 chopped mango (optional)

For marinating the chicken:

  • 1 tablespoon mixed spices

  • ¼ cup lemon juice

  • 1 tablespoon tomato paste

For garnish:

  • 1 teaspoon oil

  • 1 cup pine nuts

  • 1 cup raisins

How to Make Chicken Stuffed with Bulgur:

First, heat the oil in a large pot and sauté the chopped onions until golden brown. Add the bulgur, black pepper, coriander, cumin, paprika, cinnamon, and the chicken bouillon cube. Stir briefly, then add the tomato paste and mix until well combined.

Pour enough water into the pot to cover the bulgur. Let it cook over low heat for about 15 minutes until the bulgur is tender.

Meanwhile, marinate the chicken by placing it in a bowl and adding the mixed spices, tomato paste, and lemon juice. Rub the marinade thoroughly over the chicken so it absorbs the flavors.

Next, in a skillet, fry the pine nuts and raisins until golden. Mix a portion of the fried nuts and raisins into the cooked bulgur.

Stuff the chicken with the bulgur mixture, then sew it closed with a needle and thread to secure the filling. Wrap the chicken tightly in aluminum foil, place it in a baking dish, and bake in a preheated oven at 180°C (350°F) until fully cooked.

Once cooked, remove the foil and broil the chicken until the skin is golden and crispy.

Finally, arrange the remaining bulgur on a serving platter, place the stuffed chicken in the center, and garnish with the remaining fried pine nuts and raisins. Serve immediately so your family can enjoy its rich and delicious taste.
