  • 100g almond flour (finely ground, skinless)

  • 30g unsweetened cocoa powder


How to Prepare Chocolate Macarons:

Step 1: Whip the egg whites.
Begin by beating the egg whites until they become foamy. Gradually add the granulated sugar in three parts. After each addition, continue whipping until the mixture becomes glossy and forms stiff peaks. Ensure the sugar dissolves fully by the end of the process.

Step 2: Combine dry ingredients.
In a separate bowl, sift together the almond flour, powdered sugar, and cocoa powder. Mix well until evenly combined.

Step 3: Fold the mixtures together.
Gently fold the dry ingredients into the whipped egg whites. Use a spatula to mix in circular and upward motions until the batter flows in thick ribbons—smooth, but not runny. This process is called macaronage and is key to achieving the right texture.

Step 4: Pipe the macarons.
Scoop the batter into a piping bag fitted with a round tip. Pipe small, uniform circles onto a baking tray lined with parchment paper, leaving slight space between each. Tap the tray firmly on the counter to remove any air bubbles.

Step 5: Rest and bake.
Let the piped macarons sit at room temperature for about 30 minutes, or until a thin skin forms on top. This prevents cracking and helps form the signature “feet” during baking.

Preheat the oven to 160°C (320°F). Bake the macarons for 12–15 minutes. Allow them to cool completely before removing from the tray.

Step 6: Fill and serve.
Once cooled, pair the shells by size and fill them with your choice of ganache, buttercream, or chocolate spread. Press gently to form a sandwich.
