For the ganache:

How to Prepare Chocolate Mille-Feuille:
Start by rolling out the puff pastry and trimming the edges for a neat finish. Cut it into three equal rectangular pieces. Place the pieces on a baking tray lined with parchment paper, prick them with a fork, cover them with another sheet of parchment paper, and place a weight on top (like another tray) to keep them from puffing excessively.
Bake in a preheated oven at 200°C (390°F) until golden and crisp. Remove and let them cool completely.
To make the ganache, start with the white chocolate ganache. Heat 4 tablespoons of cream until just boiling, then pour it over the white chocolate in a bowl. Stir until melted and smooth. Add a touch of vanilla and mix well.
Repeat the same process for the dark chocolate: heat the remaining cream, pour over the dark chocolate, and stir until completely melted and glossy.
To assemble the mille-feuille, start by placing one sheet of pastry on a serving tray. Spread a layer of dark chocolate ganache over it, followed by a layer of raspberry jam. Top with the second pastry sheet and repeat the process. Add the third sheet on top.
Finish with a generous drizzle of ganache over the top layer and decorate with fresh raspberries. Chill for a short while if needed, then slice and serve.
