For the cake:

  • 5 eggs (separated: whites in one bowl, yolks in another)

  • 250g powdered sugar

  • 250g granulated sugar

  • 250g butter

  • 250g dark chocolate

  • 250g flour

  • 250g mixed nuts for garnish

  • 2 tablespoons vanilla extract

For the filling:

  • 250g dark chocolate

  • 125g cream


How to Prepare Chocolate Nougat with Vanilla:

Step 1: Prepare the filling.
Melt the dark chocolate in a double boiler (bain-marie). Once melted, add the cream and whisk until smooth and fully combined. Set aside to cool.

Step 2: Prepare the batter.
In one bowl, whisk the egg whites with the powdered sugar until the mixture is fluffy and forms soft peaks.

In another bowl, beat the egg yolks with the granulated sugar until the mixture is pale and thick. Add the flour gradually, then incorporate the melted butter and chocolate, followed by the vanilla extract. Stir until fully blended.

Gently fold the egg white mixture into the chocolate batter in stages, making sure to maintain the airiness of the mix.

Step 3: Bake the nougat.
Grease a baking pan with butter to prevent sticking, pour in the batter, and level the surface.

Bake in a preheated oven at 150°C (about 300°F) for 20 minutes, or until firm but still soft to the touch.

Step 4: Assemble and decorate.
Let the cake cool completely, then slice it horizontally into two equal layers. Spread the chocolate-cream filling between the layers.

Top the assembled cake with melted chocolate and decorate with a generous handful of chopped nuts.
