  • 150 ml of boiling water

  • 1 teaspoon vanilla extract

  • 100 grams of soft butter

  • 150 grams of muscovado sugar

  • 2 eggs

  • 2 tablespoons of black treacle (molasses)

  • 175 grams of flour

  • 1 teaspoon baking soda

  • 100 ml of milk

For the Toffee Sauce:

  • 225 grams of muscovado sugar

  • 100 grams of soft butter

  • 275 ml of double cream

  • 1 tablespoon of black treacle


Preparation Method:

Step 1 – Prepare the Dates:
Start by soaking the pitted dates in boiling water for about 30 minutes. Once softened, mash them well and stir in the vanilla extract. Set the mixture aside.

Step 2 – Make the Cake Batter:
In a large mixing bowl, cream the butter and muscovado sugar together until the mixture is light and fluffy. Add the eggs one at a time, mixing well after each addition. Then pour in the black treacle and stir until smooth and fully combined.

In a separate bowl, mix the flour with the baking soda. Gradually add this dry mixture into the wet batter, alternating with the milk. Stir until everything is incorporated and the batter is smooth.

Add the mashed date mixture to the batter and gently fold it in until fully blended.

Step 3 – Bake the Cake:
Pour the batter into a buttered baking tin. Preheat the oven to 175°C (350°F) and bake the cake for approximately 50 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool slightly before removing it from the pan.

Step 4 – Prepare the Toffee Sauce:
While the cake is baking, prepare the luscious toffee sauce. In a saucepan, combine the butter and half of the cream, and gently heat until the butter is melted. Add the muscovado sugar and stir constantly until it dissolves completely. Remove the pan from the heat, add the black treacle, and stir. Let the mixture bubble slightly, then add the remaining cream and mix until smooth and glossy.
