  • ¾ teaspoon salt

  • 1¼ cups lukewarm milk

  • 1 tablespoon grated lemon zest

For the apple and cheese filling:

  • 2 apples, peeled and chopped

  • ⅓ cup sugar

  • 2 tablespoons butter

  • ¼ cup chopped walnuts

  • ¼ cup ricotta cheese

  • ¼ cup flour

  • 1½ tablespoons cornstarch

  • ½ teaspoon vanilla extract


How to Prepare Czech Apple Kolach:

Begin by activating the yeast: in a bowl, mix ¼ cup of the milk with the yeast, sugar, and ¼ cup flour. Stir until smooth, cover, and let it rest for about 2 hours until the mixture rises and becomes bubbly.

While the dough is rising, prepare the filling. Peel and chop the apples, then place them in a saucepan over low heat. Add the ricotta cheese and cornstarch, and stir continuously until the mixture thickens and becomes cohesive.

Once thick, remove from heat and stir in the chopped walnuts and vanilla extract. Set aside and let it cool completely.

In a separate bowl, combine the remaining flour, sugar, and butter, blending them together to create a crumbly streusel topping.

When the dough has risen, shape it into small, equal-sized balls and flatten each into a small round disc. Place them on a buttered baking tray, leaving space between each one. Let them rest for another 30 minutes to puff up.
