For the stuffing:

  • 1 cup chopped celery

  • 1 onion, sliced

  • 1 tomato

  • 1 carrot, sliced

  • 1 cup orange juice

  • Salt, to taste

  • Black pepper, to taste

For the duck:

  • 1 whole duck

  • 2 carrots, chopped

  • 1 onion, sliced

  • 1 tomato

  • Salt, to taste

  • Black pepper, to taste

  • 2 tablespoons chopped celery

  • 1 tablespoon honey, for glazing

  • ½ cup orange juice

How to Make Duck à l’Orange:

First, wash the duck thoroughly under running water, then set it aside to drain in a colander.

To prepare the stuffing, place the celery, onion, carrot, tomato, orange juice, salt, and pepper in a large bowl. Mix until all the ingredients are well combined.

Next, using a sharp knife, make a slit in the duck’s breast and fill it with the prepared stuffing.

In a roasting pan, arrange the chopped carrots, sliced onion, tomato, celery, salt, and black pepper. Toss the vegetables to mix evenly.

Place the stuffed duck in the center of the roasting pan, cover the pan tightly with aluminum foil, and bake in a preheated oven at 180°C (350°F) for 1½ hours.

Remove the pan from the oven, take off the foil, brush the duck with the honey and orange juice mixture, then return it to the oven until the skin is golden and crispy.

Finally, remove the duck from the oven, transfer it to a serving platter, and present it to your family so they can enjoy its delicious, savory flavor.
