  • 3 eggplants

  • 1 cup chopped parsley (adjust quantity to taste)

  • 1 potato, diced and fried

  • 1 tomato, diced

  • Salt to taste

  • Oil for frying as needed

  • 2 cloves garlic, minced

  • Juice of 1 lemon

  • Olive oil to taste

  • 1 tablespoon mayonnaise

  • 1 cup plain yogurt

  • 1 tablespoon sumac

  • 1 tablespoon dried mint

How to Make Eggplant Rolls:

First, slice the eggplants lengthwise into thin strips. Heat frying oil in a deep pan and fry the eggplant slices until cooked and tender. Remove them and place them on paper towels to absorb excess oil.

Next, in a bowl, mix olive oil, minced garlic, salt, and lemon juice until well combined.

Dip each fried eggplant slice in the garlic-oil mixture, ensuring it’s coated on all sides. Set the slices aside.

In a separate bowl, combine the diced tomato, fried potato cubes, and chopped parsley. Stir well, then add salt, lemon juice, and olive oil. Mix until everything is evenly combined—this will be your tomato filling.

Place a spoonful of the tomato filling on each eggplant slice and roll it up tightly into a neat roll.

In a small bowl, whisk together the mayonnaise, yogurt, salt, and lemon juice until smooth.

Finally, arrange the eggplant rolls on a serving plate. Drizzle them with the yogurt-mayo sauce, then sprinkle with sumac and dried mint. Serve to your family and friends so they can enjoy this flavorful and unique appetizer.
