Emirati Balaleet – Traditional Recipe & Cooking Instructions

Balaleet is a traditional Emirati dish beloved across the Gulf region. It originated in the rich and flavorful Emirati cuisine and gradually spread throughout the neighboring countries, becoming one of the most iconic and cherished breakfast and Ramadan dishes in the Gulf.

This dish is especially popular for Suhoor and Iftar during the holy month of Ramadan, often served as a sweet treat. It stands out for its energy-boosting ingredients, as it is rich in calories, and also contains essential minerals that support overall health.

Simple and quick to prepare, Balaleet is a staple in many Emirati homes, frequently served to family and guests at gatherings and special occasions.


Ingredients for Emirati Balaleet (Serves 6):

  • 1 cup butter

  • 4 cups vermicelli noodles

  • 1½ cups sugar

  • 4 tbsp ground cardamom

  • 2 tsp ground saffron

  • 6 eggs

  • 4 tbsp rose water

  • Olive oil (as needed)

For Garnish:

  • Dried apricots (optional)

  • Fresh coriander (optional)


How to Prepare Emirati Balaleet:

Start by soaking the saffron in rose water in a small bowl and set aside.

In a large pan, heat a little olive oil and lightly fry half of the vermicelli for about 5 minutes, stirring constantly to prevent burning.

Add enough water to the pan to cook the noodles. Once the water begins to boil, add the remaining vermicelli and stir for about 3 minutes until slightly tender. Then, drain the noodles.

In the same pan, add the butter along with the saffron mixture, sugar, and cardamom. Stir gently until the sugar dissolves completely and everything blends together into a fragrant syrup.

Return the vermicelli to the pan and mix it well with the syrup. Cook for another 2 minutes, then remove from heat.

Meanwhile, crack the eggs into a bowl, beat them well, and fry them with a little olive oil in a separate pan. Spread the eggs into a thin layer, allowing them to cook like an omelet. Once the surface sets, flip to cook the other side for about one minute.

To serve, place the sweetened vermicelli onto a large serving dish. Slice the omelet into thin strips and place them on top.

Garnish the dish with dried apricots and fresh coriander as desired, and serve to your guests for a delightful taste of traditional Emirati hospitality.
