Fig and Almond Cake

 

  • 150 g soft butter

  • 100 g powdered sugar

  • 4 eggs

  • 1 tsp vanilla extract

  • 1 can sweetened condensed milk

  • 200 g all-purpose flour

  • 50 g ground almonds

  • 1 tsp baking powder

  • 1 tbsp anise seeds

  • 300 g chopped dried figs

  • 25 g almond flakes (for topping)


Preparation Instructions:

Step 1: Prepare the Wet Mixture
In a large mixing bowl, cream together the soft butter and powdered sugar until light and fluffy. Add the eggs one at a time, followed by the vanilla extract and sweetened condensed milk. Mix well until smooth.

Step 2: Add the Dry Ingredients
To the wet mixture, add the flour, ground almonds, baking powder, and anise. Stir until all ingredients are fully combined and the batter is thick and uniform.

Step 3: Layer the Cake
Grease a cake tin with oil to prevent sticking. Spread the chopped figs evenly across the bottom of the tin. Pour the batter over the figs, spreading it out gently with a spatula.

Sprinkle the almond flakes on top to give the cake a golden, crunchy surface once baked.

Step 4: Bake the Cake
Preheat the oven to 190°C (375°F). Bake the cake for 35–40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

Step 5: Cool and Serve
Remove the cake from the oven and allow it to cool slightly in the tin. Then transfer it to a wire rack or serving plate to cool completely.
