French Choux Pastry – Elegant and Creamy Dessert Recipe

A Classic Delicacy from France to the World

French Choux Pastry (Pâte à Choux) is a delicate and delicious dessert that originated in France and quickly spread across Europe and the world. Known for its airy texture and rich cream filling, this dessert is not only delightful but also energy-boosting, thanks to its generous calorie content.

Ingredients (Serves 6):

French Choux Pastry

 

For the Choux Pastry Dough:

  • 1 cup water

  • ½ cup butter

  • 1 cup all-purpose flour

  • 4 eggs

  • ½ teaspoon vanilla extract

For the Pastry Cream Filling:

  • ¾ cup sugar

  • ⅓ cup flour

  • ½ teaspoon salt

  • 2 cups milk

  • 4 egg yolks

  • 2 teaspoons vanilla extract

For Decoration:

  • 2 cups whipped cream

  • 3 tablespoons powdered sugar


How to Make French Choux Pastry:

Step 1: Prepare the Dough

In a saucepan over medium heat, combine the water and butter. Bring to a boil. Gradually add the flour, stirring continuously. Reduce the heat to low and stir until the dough comes together and pulls away from the sides of the pot.

Remove from heat and let the dough cool slightly. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until the dough is smooth and thick.

Line a baking tray with parchment paper. Using a large spoon or piping bag, drop or pipe small mounds of dough onto the tray, spacing them slightly apart.

Bake in a preheated oven at 200°C (392°F) for about 30 minutes, or until the pastries puff up and turn golden brown. Remove and allow to cool completely.


Step 2: Prepare the Cream Filling

In a saucepan, combine the sugar, flour, salt, and milk. Stir over medium heat until the mixture thickens and begins to boil. Let it boil for 2 minutes, then remove from heat.

In a separate bowl, beat the egg yolks. Gradually add half of the hot milk mixture to the yolks, stirring constantly to temper the eggs. Then pour the egg mixture back into the saucepan with the remaining milk mixture.

Return to the heat and cook while stirring constantly until the cream thickens further and reaches a pudding-like consistency. Stir in the vanilla extract, remove from heat, and let it cool.


Step 3: Assemble the Choux Pastries

Cut each cooled choux puff horizontally in half.

Fill the bottom half with a spoonful of the prepared pastry cream. If desired, pipe some whipped cream over the custard using a pastry bag for an extra rich finish.

Place the top half gently over the filling and dust the tops with powdered sugar.


Step 4: Serve

Arrange the choux pastries on a serving platter. Serve cold or at room temperature alongside tea or coffee. These elegant French treats are guaranteed to impress family and guests alike.
