Iraqi Geimer (Clotted Cream) – Recipe & Preparation Method
Iraqi Geimer is a traditional dairy product known for its rich, creamy texture. It’s made by slowly heating full-fat milk and allowing it to cool and form a thick layer of cream on top. With approximately 318 calories per 180 grams, this dish is dense in energy, fat, and cholesterol.
Because of its high fat content, Geimer is not recommended for individuals with diabetes, high cholesterol, or those on weight-loss diets. However, it remains a cherished breakfast or dinner delicacy in Iraqi households.

Ingredients for Iraqi Geimer:

2 liters full-fat liquid milk

2 cups unsweetened vanilla-flavored cream

2 teaspoons cornstarch
How to Prepare Iraqi Geimer:
In a large pot, combine the milk, cream, and cornstarch. Stir thoroughly until the ingredients are fully blended.
Place the pot over very low heat and let it slowly come to a boil—this will take about 15 minutes. Do not stir the mixture during this time; just keep a close eye on it to prevent boiling over or burning.
Once the mixture starts to bubble gently, turn off the heat and allow it to cool completely to room temperature.
Pour the cooled mixture into a glass or ceramic baking dish (such as Pyrex), then cover it tightly with plastic wrap.
Place the dish in the refrigerator for at least 12 hours. This resting time is essential for forming the thick, creamy Geimer layer on the surface.
After chilling, remove the dish from the fridge and carefully cut the thick top layer into four equal sections using a knife.
Use a flat spoon or spatula to gently roll each piece into a log shape and transfer them to a separate serving plate.
Pour a small amount of the remaining milk (from under the cream layer) over the Geimer pieces—just enough to moisten, not soak them.
To use the leftover milk, whisk it vigorously in a pot until it becomes light and frothy.
Heat it again over very low heat for about 2 hours until it gently boils. Repeat the cooling and layering process to produce more Geimer from the same batch of milk.
Serve Geimer with honey or jam as a rich, nourishing dish for breakfast or dinner.
