Italian Cannoli – Traditional Sicilian Dessert Recipe
A World-Famous Treat from the Heart of Sicily
Italian Cannoli is one of the most iconic desserts from the rich and diverse Italian cuisine. Originating from the island of Sicily, this sweet delight has journeyed across Italy, spread throughout Europe, and eventually reached the Americas with European immigrants, earning a spot as a globally loved dessert.
Cannoli are known for their crispy pastry shells filled with a rich, creamy filling, typically made with ricotta cheese. They're festive, flavorful, and surprisingly easy to prepare, making them a charming addition to any gathering.
Ingredients (Serves 4):
For the Cannoli Shells:
-
2 eggs
-
¼ cup white sugar
-
¼ teaspoon salt
-
3 tablespoons clarified butter or ghee
-
3 cups all-purpose flour
-
2 tablespoons cold water
-
2 tablespoons white vinegar
-
1 teaspoon ground cinnamon
-
1 egg white (for sealing the shells)
For the Filling:
-
3 cups ricotta cheese
-
1¼ cups white sugar
-
2 teaspoons vanilla extract
-
¼ cup chopped pistachios
-
¼ cup melted chocolate chips
How to Make Italian Cannoli:
Step 1: Prepare the Dough
In a stand mixer, combine the flour, sugar, cinnamon, salt, and clarified butter. Mix until the ingredients are well blended. Add in the 2 whole eggs, vinegar, and cold water, and continue mixing until the dough forms a soft, pliable ball.
Wrap the dough in wax or parchment paper and refrigerate for about 30 minutes.
Step 2: Shape and Fry the Shells
Roll out the chilled dough and cut it into strips. Wrap each strip around a metal cannoli mold (or create makeshift cylinders using aluminum foil). Brush the overlapping edges with egg white to seal.
Heat oil in a deep pot. Carefully fry the cannoli shells until golden brown and crisp. Remove and place them on paper towels to drain excess oil. Once cooled, gently slide them off the molds.
Step 3: Make the Filling
In a large bowl, mix ricotta cheese, sugar, and vanilla extract until smooth and creamy. You can use a hand mixer or whisk for a finer texture.
Spoon the filling into a piping bag.
Step 4: Assemble the Cannoli
Pipe the filling into both ends of each cannoli shell. Dip the ends in melted chocolate and crushed pistachios for a beautiful and tasty finish.
Refrigerate the cannoli for a short time to allow them to set.
Step 5: Serve
Arrange the cannoli on a serving platter and enjoy them chilled. These delightful pastries are perfect alongside coffee or espresso and are guaranteed to impress guests with their crisp texture and creamy filling.
Buon appetito!
