  • 2 tablespoons yellow cornmeal

  • 9 tablespoons cold unsalted butter, cut into cubes

  • 1 egg yolk

  • 3 tablespoons ice water (add more if needed)

  • 1 egg white, lightly beaten with 2 tablespoons water

  • 1 tablespoon sugar (for sprinkling)

  • Lemon-flavored ice cream for serving


How to Make Italian Crostata:

Begin by combining the berries with a bit of flour and powdered sugar in a medium bowl. Mix gently until the fruit is evenly coated. Set the berry filling aside.

In a food processor, combine the remaining flour, granulated sugar, and cornmeal. Pulse the ingredients until they reach a fine, sandy consistency.

Add the cold butter and pulse again until the mixture resembles coarse crumbs. Add the egg yolk and ice water, pulsing until a soft, pliable dough forms. If the dough feels dry, add more ice water, a teaspoon at a time.

Divide the dough into two equal balls. On a floured surface, roll each portion into a round disc.

Place each disc onto a baking sheet lined with parchment paper. Spoon the berry filling onto the center of each circle, leaving about 2 inches of dough around the edges.

Sprinkle the remaining flour-sugar mixture over the fruit, then gently fold the edges of the dough over the filling, pleating it loosely to create a rustic border.

Brush the crust with the egg white wash and sprinkle the top with sugar for a crisp, golden finish.

Bake in a preheated oven at 375°F (190°C) for about 30 minutes, or until the crust is golden brown and the berry filling is bubbling.

Once baked, remove the crostatas from the oven and allow them to cool slightly. Cut into squares or wedges and serve each portion with a scoop of lemon ice cream for a refreshing finish.
