Kibbeh in Yogurt Sauce – Traditional Syrian Kibbeh Labanieh Recipe – Cooking Guide

Kibbeh Labanieh is a beloved variation of traditional kibbeh, deeply rooted in the rich and diverse Syrian cuisine. It is a staple dish in Syrian households and is often prepared during festive gatherings and family feasts.

This dish holds a special place in the culinary heritage of Syria, cherished for its delicate flavor, creamy yogurt sauce, and hearty filling. It's a comforting and flavorful meal that reflects the essence of Levantine hospitality.


Ingredients (Serves 5):

Kibbeh in Yogurt Sauce

 

For the Filling:

  • 100 grams of minced lamb fat (can be adjusted to taste)

  • 1 onion, grated

  • 1 cup crushed walnuts

  • Salt to taste

  • 1 teaspoon black pepper

For the Kibbeh Dough:

  • 1 kg fine bulgur

  • ¾ cup fine semolina

  • 500 grams lean lamb meat, finely ground

  • 1 onion

  • Salt to taste

  • Water as needed

For the Yogurt Sauce:

  • 1 kg plain yogurt

  • 1 egg

  • 3 tablespoons cornstarch

  • Salt to taste

  • Meat broth as needed


Cooking Instructions:

Step 1: Prepare the Filling
In a bowl, mix together the minced fat, grated onion, crushed walnuts, salt, and black pepper until well combined. Set the mixture aside.

Step 2: Prepare the Kibbeh Dough
Soak the bulgur in water for about 30 minutes. Once it absorbs the water and becomes soft, mix in the salt, black pepper, and semolina.

In a food processor, blend the bulgur with the onion until smooth. Then add the ground meat and continue mixing until a cohesive dough forms. If needed, add a bit of water to help with binding.

Take portions of the dough, shape them into small discs, and fill each one with a spoonful of the walnut-meat mixture. Seal them tightly and poke two small holes in each disc to allow the yogurt sauce to penetrate while cooking.

Step 3: Prepare the Yogurt Sauce
In a large pot, combine the yogurt, egg, cornstarch, and salt. Stir continuously over medium heat until the mixture starts to boil and thickens. Add meat broth to adjust the consistency and bring the sauce back to a boil.

Step 4: Cook the Kibbeh in Yogurt
Gently place the stuffed kibbeh discs into the simmering yogurt sauce. Let them cook on medium heat until they float and are fully cooked through, gently stirring to avoid breaking them.

Step 5: Serve
Once cooked, transfer the kibbeh and yogurt sauce into serving bowls. Serve hot, and enjoy this creamy, comforting Syrian classic with family and friends. It's a dish full of tradition, warmth, and flavor.
