Lemon Bars – Easy & Zesty Dessert Recipe

Lemon bars (or lemon fingers) are a delightful dessert loved around the world for their simple preparation, refreshing lemony flavor, and crispy texture. Ingredients (Serves 4):
For the crust:

1¼ cups all-purpose flour

7 tablespoons unsalted butter

½ cup powdered sugar (confectioner’s sugar)
For the lemon topping:

2 eggs

Zest of 1 lemon

Juice of 1 lemon

1 tablespoon all-purpose flour

½ teaspoon baking soda (bicarbonate of soda)
For garnish:

Powdered sugar for dusting
How to Make Lemon Bars:
Step 1: Prepare the Crust
In a mixing bowl, combine the flour, butter, and powdered sugar. Mix until the dough comes together and becomes firm.
Line a baking tray with parchment paper to prevent sticking. Press the dough evenly across the bottom of the tray using a spoon or your hands to form the crust.
Pre-bake the crust in a preheated oven at 180°C (350°F) for about 15 minutes, or until lightly golden. Remove and let it cool.
Step 2: Prepare the Lemon Topping
In a separate bowl, beat the eggs, then gradually add the sugar while continuing to whisk.
Add in the lemon juice, lemon zest, flour, and baking soda. Mix until fully blended and smooth.
Pour the lemon mixture evenly over the cooled crust.
Return the tray to the oven and bake for about 30 minutes, or until the top is set and turns a golden yellow color.
Step 3: Cool and Serve
Let the tray cool completely before cutting. Once cooled, slice the dessert into squares, rectangles, or triangles—whatever shape you prefer.
Dust with a light layer of powdered sugar for a beautiful finish.
