Maamoul with Chocolate – A Festive Fusion of Tradition and Indulgence
Maamoul with chocolate is a delightful twist on one of the Arab world's most cherished traditional desserts. Popular across countries like Lebanon, Syria, Iraq, Palestine, Jordan, and the Gulf, this filled pastry—also known as kleicha in Iraq and the Gulf—is a staple during Eid, weddings, and joyful family gatherings.
While traditionally filled with dates, walnuts, or pistachios, this version introduces chocolate to the mix, adding a rich and indulgent layer to the already beloved treat. Maamoul is cherished not only for its nostalgic taste but also for the warmth it brings to celebratory occasions.

For the dough:

Hershey's chocolate bars (or any chocolate of choice), melted

How to Prepare Chocolate Maamoul:
Step 1: Prepare the date filling.
Mix the ground dates and sesame seeds in a bowl. Add the oil and knead until a smooth paste forms. Shape into small balls and set aside.
Step 2: Prepare the nut filling.
In a separate bowl, mix crushed nuts with sugar and rosewater or blossom water. Set aside.
Step 3: Make the dough.
Melt the butter and combine it with milk in a saucepan over low heat until warm. In a large bowl, mix semolina, flour, sugar, and rosewater. Gradually pour the warm milk-butter mixture into the dry ingredients, stirring continuously until a dough forms. Cover the dough and let it rest and ferment for about 30–45 minutes.
Step 4: Shape and fill.
Divide the dough into small balls. Flatten each ball slightly, place a date or nut filling in the center, and seal the dough around it. Press each filled ball into a Maamoul mold to create the traditional pattern, then gently release.
Step 5: Bake.
Place the formed Maamoul pieces on a baking tray. Bake in a preheated oven at 180°C (350°F) for about 25–30 minutes or until lightly golden.
Step 6: Decorate.
While baking, melt the chocolate. Once the Maamoul is out of the oven and slightly cooled, dip the tops into melted chocolate. Dust with powdered sugar for a beautiful finish.
